Thin skinned tender white core for a tangy sweet taste. Mostly eaten in the cooked form, this Vit. C-rich vegetable is used in making sambar. It is also said to be an ideal accompaniment for greasy meats, considered to be a neutraliser for acid reflux and spicy food. Tender chayote, when made into a dry dish with potato, is said to help with digestion and gastric problems.
