Gongura has many culinary uses, the most popular is the pickled version. Gongura comes in two varieties, green stemmed leaf and red stemmed. The red stemmed variety is more sour than the green stemmed variety. Gongura leaves and flowers help cool the body and reduce inflammation. They also contain moderate levels of potassium, calcium and magnesium, which help strengthen the bones and are very useful in relieving symptoms of fever.
